ILOLI

This year, ILOLI presents a proposal that stands out for its coherence and elegance. After its annual closure, the restaurant reopens from March 2 through Eid with a ftour served at the table. Remember this summer when we told you about the unmissable culinary stop in the Oasis district: Le Trianon? This fall we have an update:  the complex is expanding its experience with a new upstairs space designed for night owls. From the moment you step in, Mila sets a plush, stylish tone, in the spirit of Ruby: red velvet, dim lighting, and the black panther, a true totem of the venue. Every detail across the floors—from paintings to statuettes, down to the animal motifs on the carpet—is carefully orchestrated. And the ultimate wink we love: the Red Panther cocktail, with its spicy notes, blending Casamigos Blanco, zesty grapefruit, and sparkling bubbles.

The menu, co-created by chefs Ramzi El Bouab and Celso Szczerba, a Brazilian chef specializing in Japanese cuisine, alongside pastry chef Rayan Néhmé, reinvents Japanese flavors. Highlights of this culinary journey include the Mila sashimi with truffle ponzu, braised salmon with chili jelly, and yuzu cheesecake. Marion establishes itself as Casablanca’s new restaurant where you come as much for the menu as for the setting. At first glance, you’re charmed by the huge windows opening onto the ocean. The refined atmosphere envelopes you next, blending soft textures, warm tones, and elegant designs.  The culinary experience is led by executive chef Attilio Marrazzo, originally from Campania, trained in Italy and France, notably with Joël Robuchon. Leila Hadioui has moved!

But not far, as she’s still on the first floor of the Morocco Mall. Leila Hadioui has indeed moved to a new space, just a few meters from her old boutique. You won’t have any trouble finding it to shop for her creations. The actress, TV host, and fashion designer has imagined a new setting for her collections, and it’s really nice! Light plays a major role, and the attention to decorative details reminds us how meticulous the designer is.

You will of course find collections of timeless pieces such as gandouras, djellabas, and other capes, as well as her capsule collections. Stay tuned, as she’s currently preparing her next fashion show. It will take place in Casablanca on December 12th.

An open-air mall

One of the key pieces of news in recent weeks is the opening of Mall du Carrousel in Rabat. Spanning 30,000 square meters facing the Atlantic Ocean, it’s unquestionably the largest open-air shopping space in the region. Dedicated to shopping, the venue also offers entertainment spaces, children’s play areas, and dining options, with the major advantage of being surrounded by more than 7,000 square meters of green spaces. A real green haven, where you can stroll, sit under a tree to snack or relax. It further solidifies, if there was any doubt, the eco-friendly reputation of the capital.

The venue features about a hundred brands, covering everything from fashion to home décor. It also includes a multiplex cinema by Cinerji (a new entertainment and leisure concept in Africa) with around 2,000 seats. Behind Maison Kayser is Éric Kayser. This great-grandson of a baker, who likes to define himself as an alchemist of baking, is as jovial and approachable as he is passionate. He has become an emblematic figure in the world of artisanal baking, largely because he places a high value on combining tradition and innovation. From Paris to Tokyo, through Singapore and New York, Eric Kayser’s loaves, baguettes, pastries, and other confections are ambassadors of French craftsmanship.

Continuing its development, especially on the African continent, Maison Kayser has chosen to set up in Rabat. After Dakar, Abidjan, and Lagos, it’s here in Morocco—where bread-making is also an art—that we met Eric Kayser. He welcomed us into Maison, his new bakery,pastry shop, and café. Open from 7AM to midnight, with its Parisian elegance, it’s  the ideal stop for a gourmet breakfast, a bistronomic meal, or simply to buy good sourdough bread, buttery croissants, or tarts.

Passionate and fascinating, the master artisan himself took the time to explain how to recognize quality bread. That means its aromas (a bread can contain over 200), its crispy crust, and its soft crumb. He also shared about his journey and what drives him.

Maison Kayser consists of  several generations of bakers. How is the knowledge passed on?

Indeed, the adventure began with my great-great-grandfather, so five generations ago. Unfortunately, my parents quit the profession when I was 7 years old. Still, I kept those memories, those smells of apple tarts, and especially the pleasure I had spending hours in the family bakery. So naturally, I turned to baking as soon as I could.

I became a Compagnon Du Devoir and toured France with an association that brings together men and women to pass on their skills to younger generations throughout France. Then I became a trainer. While my roots are in eastern France, I also lived in the south, but I chose to start working in Paris. For me, it was a real challenge. Paris, with its gastronomic reputation, is clearly one of the world capitals where culinary professions have a special place.

So, we understand that you are an artisan baker. But you are also an author and inventor?

In 1994, I indeed contributed to the invention of a machine: the Fermentolevain. We marketed this equipment at a professional food show even before opening our first store. Our idea was simple: to make the baker’s job easier. Bakers lived, slept, and worked according to the rhythm of their sourdough fermentation, a living and fragile substance. It was very time-consuming and frankly restrictive. So, we sought a solution, and that’s how we invented a machine to manage fermentation time.

Well, actually, we managed to make it do even more! It mixes and beats the sourdough every 30 minutes, heats and cools it, all to develop a culture of liquid wild yeast, renewed continuously. The process starts with a mix of one kilo of flour and one liter of water, left to ferment for four hours. To this, two more kilos and liters are added, and so on.

Eventually, we obtain a yeast culture that exists within the machine’s environment and naturally raises the sourdough. Each day, the same miracle happens! The result: entirely natural yeast is used to make bread on an industrial scale!

Regarding writing, I have published about fifteen books. While some didn’t do well, others were quite successful. For instance, Larousse du Pain, published in 2013, sold nearly a million copies. It’s a great joy for me to see the success of this book because I love my profession and especially enjoy passing on my passion!

And today, where can we find you—airports or laboratories?

Realistically,  I think I spend about 30% of my time there. I just returned from ten days of training in the USA, where I spent almost 15 hours a day in labs doing training and demonstrations.

And for creation, do you find time?

I contribute to all the creations—fortunately, not alone, of course! But I try to give my opinion on everything we produce. My favorite fields of creation are viennoiserie and bread, naturally! I am convinced that for a company to succeed, it must be surrounded by competent people in each field and orchestrate everything for the magic to happen. My main goal is to train people to always strive to do better than me.

The tableware, for example, is custom  and handmade, just like the small embroidered napkins that bear inspiring messages. The concept was conceived by a young woman, Samia Benkiran, a trained nutritionist and passionate cook. Whether it’s lunchtime during the week or brunch on Sundays, Salt & Pepper is an ideal stop.

For what to order,  the “Petit Bistro” menu is served at the table from 12pm to 3pm, while the “Snacking” menu is available throughout the day. Those with a sweet tooth will easily be tempted by the cheesecakes, banana breads, or lemon brownies. The tarfernout burger, breaded crab cakes, and numerous salads will satisfy savory cravings. Local and seasonal products, combined with balanced and inventive pairings, are the main ingredients at  Salt & Pepper.

La Bavaroise, for a Bistronomic Lunch or Dinner

Located opposite the central market  downtown, Brasserie La Bavaroise is a true institution among restaurants in Casablanca. Since 1968, it has been a go-to spot for enjoying a beer or a good glass of wine, savoring quality meat, and having a pleasant time. After months of renovation, this legendary establishment has recently reopened its doors. True to its “Parisian brasserie” vibe, it has undergone a makeover and now welcomes guests in a sleeker, more contemporary yet equally warm setting.

In addition to modernizing the facilities, an outdoor terrace has been created. An open-air  spot that’s perfect for sunny days. When it comes to the cuisine, they’ve kept things the same because it’s simply delicious! Annabel’s, for a 1930s-style Evening Kickoff

Ruby Supper Club, for a Trendy Afterwork

Opened on April 18th, Ruby is the new hot spot in Casa. In a cozy setting, adorned entirely in red, it is only accessible by reservation. DJs, singers, and pianists take turns entertaining guests, inviting them to sing and dance to upbeat tunes. For example, Victor Le Douarec sets the stage on fire with French variety songs, while Ignace De Souza pumps up the dance floor with more electro-pop sounds.

In the kitchen, the recipes are inspired by Japanese cuisine. They elevate many ocean products and serve them with a certain aesthetic flair. The cocktail list is also sure to please, complemented by a lovely wine cellar. Ruby is not only one of the new restaurants in Casablanca worth trying but also a great place to meet new people!

Le Mano, for Dancing the Night Away

Located within the new La Promenade complex, which will eventually host a sports bar, The Garrison, and a restaurant, Momo’z Garden, the new nightclub Mano has opened its doors. In soft opening since May 2nd, this new dance floor promises to bring some electronic freshness to the city. Designed to become a new gathering spot for Moroccan and international DJs, Mano Club aims to reconnect  Casablancans  with the nightlife scene. For the official opening night, Arymé and Rockin Moroccin took over the turntables and had the guests dancing until the early hours of the morning!

“At last!”. That’s what the Shoelifer team thought when they crossed the doors of the Royal Mansour Casablanca, which reopened on April 15th. After eight years of titanic renovation, this mythical location  from the 1950s has come back to life. And thus, it endows the pulsating heart of the economic capital with a very (very) beautiful urban palace, located at 27 Avenue des Forces Armées Royales (FAR).

In 1951, the year of its grand opening,  the Royal Mansour Casablanca, the first five-star hotel in the metropolis, symbolized the modernity of the White City. It had become the essential meeting place for the elite, celebrities, and other global personalities.  Seventy-three years later, the Royal Mansour Casablanca is a kind of contemporary revival of that golden age. And it intends to breathe new life into this Art Deco business district, nestled between the port and the medina.

At first glance, the uniform of the valets and bellboys sets the tone. It’s a “retro-nostalgic aesthetic à la Wes Anderson,” as described by the Royal Mansour Casablanca.

 The universe of this urban palace brilliantly blends Art Deco style, sleek design, and majestic curves, all punctuated by contemporary artworks  by artists from around the world. Among them is a stylized map of Casablanca seen from above, crafted like a contemporary marquetry in glass, mirror, brass, and copper,  by artist Charles Kalpakian. Brass, an iconic element of Art Deco style, is omnipresent at the Royal Mansour Casablanca. Just like wood and marble, it is reminiscent of the luxury of transatlantic ocean liners.

From Palace to Ocean Liner

“Ocean liner” is indeed the term that comes to mind because the Royal Mansour Casablanca is a juggernaut.  In total, it consists of 23 floors, 149 rooms, suites, and private apartments, four restaurants, and a bar. Plus, it has a spa sprawling across two floors and over 2500 square meters (complete with a hammam, hair salon, and a plethora of wellness and skincare treatments), poised to become one of the new hotspots for beauty enthusiasts in the city.

But the Royal Mansour Casablanca also boasts six meeting and conference rooms, a business lounge, and a spectacular ballroom with a gold leaf ceiling capable of accommodating 450 people. It’s a city within the city, and resolutely luxurious and glamorous. Yet, the spirit of the place is (and feels) profoundly convivial, far from being stuffy.

The editorial team loved the rooms, exuding incredible elegance (plus ultra-comfy bedding). The design, inspired by the 1950s, brings together the conventions  of urban, chic, and contemporary Casablanca, with a vintage twist. In the bathrooms (featuring both a bathtub and a large shower), there’s again remarkable marquetry work combining white marble, pink marble, and brass. A nice touch: a dressing room equipped with an automatic watch winder. Another highlight: the breakfast croissants, simply delicious (a rare enough occurrence to be noted).

New spots in town

True to its roots, the Royal Mansour Casablanca caters to businesswomen and businessmen as well as tourists. But it also aims to be a place of life and encounters for urbanites, especially those from Casablanca and Rabat. In the slang of the 1950s, it’s referred to as the “hub of waves”.

The establishment boasts four restaurants. On the ground floor, there’s La Brasserie by Eric Fréchon (chef of the Epicure restaurant at the Le Bristol hotel in Paris, awarded 3 Michelin stars). Throughout the day, you can enjoy the best of classic French cuisine, with a focus on seafood (Oualidia oysters, lobsters, etc.). And you can take advantage of the terrace overlooking the patio, designed as a winter garden.

Also opening onto the patio is the Sushi Bar by Keiji Matoba, an authentic Japanese chef. A chic and intimate restaurant, where a brigade of Japanese sushi masters performs in front of our eyes to create exquisite sushi, sashimi, and other  makis. Not to mention the desserts —  absolutely heavenly. Classic but effective (and generous).

On the 23rd floor: La Grande Table Marocaine by Karim Ben Baba. A tribute to the best of Moroccan gastronomy, it offers  a 360-degree view over the entire city of Casablanca, the Hassan II Mosque, and the ocean. Between a bite of blue lobster from Oualidia and a sip of  peach m’quila, you can admire the legendary Art Deco heritage of Casa from above.

Last but not least, the 23rd floor houses a fourth establishment, Le Rooftop, dedicated to Mediterranean cuisine with an evolving concept. Chic & chill, with an exceptional panoramic view of the city and the Atlantic (which will quickly become the place to be in our humble opinion). It’s perfect for an aperitif at sunset or a romantic dinner. If you’re not prone to vertigo, you can access these two establishments via a glass walkway, for an even better view.

Very attentive to detail, the Royal Mansour Casablanca has chosen tableware designed by Bernardaud. While the cutlery, especially the chopsticks at the Sushi Bar, are designed by Christofle. So chic!

The Bar, on the ground floor, is designed as a place conducive to confidential or intimate meetings. We love its warm and theatrical atmosphere, worthy of the great American bars, where you can either enjoy a club sandwich on the go or sip on a signature cocktail. We bet many of you have already planned a visit to the Royal Mansour Casablanca…
