Fès, spring under  a golden glow 

Fès in spring is pure serenity. An invitation to slow down, to breathe. The city gently shakes off the cold embrace of winter. The air is soft, almost whispered. Amsterdam, a splash of color along the canals 

Amsterdam often has a reputation for being wild, red-lit, and hazy… and not necessarily in the most flattering way. That’s what I thought too—until I actually visited and completely fell under its spell. Whether you’re already a fan or looking to challenge the clichés, spring is the perfect time to explore Amsterdam. And over there, springtime is nothing short of spectacular!

The city doesn’t just shake off winter; it bursts into life in a fireworks display of colors and good vibes. The iconic canals, lined with multicolored tulips, offer a breathtaking spectacle, as if someone had taken a giant paintbrush and splashed vibrant colors  all over the city. After this explosion of color, head to Beulings—a hidden gem where the open kitchen lets you watch culinary magic unfold. Each dish is a perfectly balanced mix of textures and flavors. It’s another  kind of fireworks, but this time for the palate.

San Casciano dei Bagni, a Tuscan retreat for the soul 

Roaming through Tuscany in spring is like stepping into a living poem. Rolling hills covered in wildflowers, vineyards beginning to turn green, and medieval villages where you can easily imagine retreating from the world—while indulging in divine cuisine.

In this region, at this time of year, every view looks like a painting, and every bite tastes like a masterpiece. And I’m not  exaggerating. The landscapes, the food, the ambiance—everything is just perfect. This idyllic setting is the ultimate place to recharge.

A city in the southeast of France, Arles is full of charm, art, and history, where the stones have almost as many beautiful stories to tell as the inhabitants. Located at the foot of the Alpilles and at the entrance to the Camargue, this town, with its Roman and Romanesque monuments, is listed as a UNESCO World Heritage site. If the famous Lettres de mon moulin, written by Alphonse Daudet in the late 19th century, taught us that an “Arlésienne” is a person you wait for but who never arrives, I can guarantee you that Arles will leave you with only one desire: to return. And you’ll want to return with all your friends, with whom you’ve shared your desire to discover Arles and the region.

What we love to do there:

Strolling around and getting pleasantly lost in the maze of small streets within the old city’s walls. Taking the time to admire the buildings and monuments from a sunny terrace while sipping a Perrier or a local glass of rosé.

Entering the sublime Saint-Trophime Cathedral, one of the most beautiful Romanesque churches in France, famous for its Aubusson tapestries. Visiting the arenas and imagining life in 8 AD, swooning over the biceps of the gladiators fighting there. Considering taking the “Van Gogh” tour organized by the Tourist Office—a very cool way to experience the city through the steps of the famous painter who found so much inspiration in Arles.

Visiting Luma, the contemporary art foundation inaugurated in 2021, and strolling through the museum’s aisles. Sometimes being amazed and other times, quite (very) perplexed by so many puzzling works. Finally, browsing local product shops and returning with suitcases full of Camargue rice, flavored fleur de sel, lavender sachets, and other sweets.

My must-sees:

Inari

Probably one of the best restaurants in town. Certainly the most popular. One of those places you might think is trendy but, in reality, is so well-established and authentic. The media attention is not just a passing fad.

Nestled in a chapel dating back to 1224 on Place Voltaire, Inari is the first restaurant where the talented chef Céline Pham set up her kitchen after delighting us with numerous pop-up events.

And it creates a truly delightful location, embodied by the chef who has put all her heart and convictions into it. The menus change with the seasons, according to the market. The dishes evolve, but the chef’s precision and her sharp sense of balance remain unchanged.

A restaurant where every flavor is respected and enhanced. A place where every dish is well thought out. To our delight.

Sauvage

The name is definitely a contradiction for  the coziest place in town. A temple of delicacies. A magnificent bakery where everything is handmade. The bread is kneaded by hand and baked long enough to have the taste of happiness.

You’ll find all the regional treats like orange blossom navettes, the famous Provencal pompe in a delicate lavender version, and many sourdough loaves.

In short, plenty of good things, perfect for breakfast or a snack at any time! I suggest you even take some to go—they travel surprisingly well.

Moustique

An essential location  in town. A shop that’s a bit like a curiosity cabinet where good taste seems to be a guiding principle. Here, every object seems to have a story to tell. It’s the perfect shop to buy—especially for yourself—original and local gifts. A big favorite for decorative accessories and stationery.

Le Méjan Cinema and Actes Sud Bookstore

One of my favorite cinemas ever! Firstly, it’s attached to the beautiful Actes Sud bookstore. One of my favorite bookstores, because Actes Sud is the best publishing house in the world! What? Am I not being objective? So what!

More seriously, Actes Sud is a publishing house that has managed to maintain its unique brand: a spirit of discovery and sharing.

And its cinema is a reflection of this. Small theaters but with a very fine, demanding, and eclectic program. There’s always an interesting film playing. And if you’re late, all is not lost. Take a stroll around the bookstore. Dozens of fascinating books and just as many invitations to travel await you.

Les Carrières des lumières in Les Baux-de-Provence

A few kilometers from Arles is the village of Les Baux-de-Provence, perched on the rock, offering breathtaking views. Often voted “most beautiful village in France,” it’s one of those exceptional places to visit at least once in your life.

There, you’ll find the Carrières des Lumières. Monumental white stone quarries rising 14 meters high, they host exceptional immersive exhibitions. Clearly a must-see in the region. This season features an exhibition on Orientalists, particularly around the travel diaries of Delacroix. It’s very tempting!

Chez Sam

It used to be at the far end of the port. Today, it’s in the medina near Bab Sbaâ. The address has changed, but the place remains just as iconic. It’s a city institution.

Is the reputation overrated? Yes, perhaps a little, but it doesn’t matter much. The food is good. The fish is ultra-fresh. The cooking is masterful. The service is smooth and friendly. What more could you ask for?

Pâtisserie Driss

This is the legendary pastry shop of the city. It’s tiny — so tiny that you wonder how so many things can fit in it. They offer all the Moroccan pastry classics. My guilty pleasures: almond paste and jam biscuits that taste and feel like childhood. And you always leave with a box (or two) in your suitcase.

Bayt Dakira

A unique and powerful place that celebrates Morocco’s diversity and the rich history of Essaouira. Nestled in a narrow alley of the Mellah, the old Jewish quarter of Essaouira, the House of Memory of Essaouira highlights the serene and peaceful coexistence between communities. A “Salam Lekoulam, Shalom Alaykoum” on a wall sums up the spirit of this magical place.

Above all, it is a place that does not aim to be merely nostalgic. It is a place that reminds us of our responsibility to write our future as one of  coexistence. The small synagogue at the entrance has been renovated, so it is not a museum-like static place but a living space– a  place for the future.

Number One

Objectively the coolest bar in Tangier and, in my opinion, in the world. It has all l the soul of the city but no nostalgia. If you want to understand  why this city is so unique and indescribable, you have to go to Number One.

I absolutely love this brand.  I love everything about it,  I love wearing New Tangier all the time, for great times of celebration,  and parties, but also – and especially – for everyday life. Casa Di Italia

This is a must.  You cannot go to Tangier without sitting down at Casa di Italia.

It’s one of those  must-visit places that you should not skip. Otherwise, you would miss out on what could be essential: all of Tangier crosses paths there, meets there, or rendezvous there at some point during the week.

I particularly love having dinner there on Sunday evenings, often in large, noisy groups — the happiest way to end the week and look forward to the next one.

What to do there:

Discover the incredible variety of architectural styles it offers. From the jewel-like Gothic architecture of the castle to Baroque monuments, a neoclassical primatial palace, and an Art Nouveau church adorned with mosaics and earthenware, Bratislava itself is like a museum  to behold. Devín Castle:

Perched overlooking the confluence of the Danube and Morava rivers, the location is promising in itself. This fortress is a significant site in Slovak memory. The first document mentioning Devín Castle dates back to 864, during the time of the Great Moravian Empire, of which it was a political center. In the 10th century, the castle became a border post for the Kingdom of Hungary. It was partially destroyed in 1809 by Napoleon’s troops. The remaining ruins now house a museum and gardens.

UFO:

A flying saucer (a UFO, indeed) perched 85 meters high on the SNP Bridge (yes, that’s the real name of the bridge, also known as Nový Most) above the Danube. If you don’t encounter  any little green men, you can sip a cocktail while admiring the breathtaking view. The food isn’t outstanding, but that’s okay; you don’t stay for dinner.

Bratislava Castle:

This is one of the splendors of the Slovak capital. It now houses the National Museum, where you can discover the rich and often overlooked history of the country, from the Middle Ages to the present day.

Slovak Pub:

This is an institution in Bratislava. It  is where you can feel the pulse of the city. With its large wooden tables, it’s definitely a pub, but a   true Slovak pub with the great classics of local cuisine, which are very tasty, but not exactly light (that’s an understatement). You must try the simple but famous  “Vyprážaný syr,” a breaded cheese steak served with “hranolky” (fries). Dip it all in the generous “tatárska omáčka” sauce. We told you it wasn’t exactly light fare, didn’t we?

Restaurant Parlament:

This is one of the city’s finest dining locations.  It’s large, bright, and has an amazing view of the river and forests. The menu is bold. How can we describe it?  Something between modernity and tradition.

This is an imperial pastry shop for an equally imperial breakfast or afternoon tea. With its refined decor, fine china, and delicate cakes that you’ll want  to savor  in small bites, it is a place of splendor from another time. And be sure to visit the toilets too! They’re also imperial!

Spanish cities are regularly portrayed as cool destinations in this magazine. I have chosen to take you to Tarifa, perhaps because this charming little town is only 13 kilometers from Morocco, and I like to be transported without having to travel too far. This is especially true because  you can go there easily and often!  Maybe it is also because Tarifa is at the tip of Europe, and being at the tip is always nice! Above all else, it is because it is often unfairly thought of as only a stopover city. It is seen as a transit hub, a port where you arrive just to leave. On the contrary, Tarifa is actually a very cool destination–  a charming place that deserves your time.

What we like to do there:

Wander through the alleys of the old town amidst whitewashed houses, bite into a churro, or stop for a caña (depending on the time). Stroll through the shops and discover charming craftsmanship. Buy colorful ceramics, pretty tunics, and fans. Eat tuna, bonito, and more tuna. Think about coming back and how next time you’ll try kitesurfing. Then, come back within the year and don’t try kitesurfing.

Mirador Del Estrecho

Take a walk (or a run, depending…) all the way up to Mirador Del Estrecho to contemplate what is probably the most beautiful view of the Strait of Gibraltar.

Nice healthy spot to start the morning well and begin the day with a clear conscience (and possibly compensate for the excesses of the previous day). It offers a very nice menu of freshly squeezed juices and smoothies.

La Pescaderia:

One could walk past this restaurant and write it off, taking it  for just any restaurant that grabs tourists at the port exit, assume it has no charm and leave it aside. That would be a big mistake. A rookie mistake, in fact. I made this mistake every time I left the port of Tarifa for years — before an insider introduced me to it.

Order an arroz caldoso: literally translated, it means “boiling rice.” It’s a kind of paella version of risotto (I think any self-respecting food critic would scream scandal at this description), and it’s amazing. You had better be very hungry and not too ambitious for the afternoon. In fact, there will be no more afternoon; when you finish lunch here, it’s 6 p.m.

Siglo XIX:

Objectively, this is the best tapas bar in the city. Everything is good. You can order the entire menu, share everything, and even reorder those little plates that disappeared too quickly. It also welcomes you with a very cheerful atmosphere and smiling service.

Okay, I admit I’m not really objective, but I’m sincere: it’s my favorite tapas bar. It’s delicious.

La Palmera:

A small typical café with its joyful regulars who smile, greet each other, and talk loudly. Even if you walked in with your eyes closed without knowing where you were, you would realize you were  in Andalusia! A generous and warm atmosphere, it is quaint and family-friendly. The churros are perfect and exactly how they should be: soft and firm.

La Ruina:

For a last drink (or several).

After all these bars in a row where shots are drunk even faster than numbers are exchanged, make your way to the rampart of the old town and there, in the remains of the fortifications, you’ll find a nightclub that knows how to party. And here, the party is lived, drunk, sung, shared, and danced until the end of the night.
