The rose praline from Hicham Aouad

The “galette des rois” with rose pralines from Les Ateliers du Chef is a little wonder. The choice was not easy among the wide range of galettes for 2025 offered by Hicham Aouad’s team. To name a few, there’s the Half-Dark Chocolate, the Passion Coco, and of course the Traditional… At the editorial office, we succumbed to the Signature galette made with delicious sugar-coated almonds, a Lyonnaise specialty. Beneath its golden-hued puff pastry, the frangipane with rose pralines plays on both visual and taste contrasts. First crispy, then creamy and soft while still slightly crunchy. The best way to understand it is to taste it!

Paul’s galette des rois never disappoints…and  you know it. But this year, it is offered in a particularly indulgent version: made with pure butter, of course. We couldn’t consider a list of galettes for 2025 without including the one that caught our attention at the Pierre Hermé boutique at La Mamounia. Classic, but a must-have: the Infiniment Amande Galette. The master pâtissier highlights all the facets of the almond. Under a golden and crispy puff pastry, an almond cream enriched with roasted almonds reveals a delicious balance. A must-try!
